Which has more health benefits, Water kefir or milk kefir?
We often get asked which type of kefir, Milk or water, is better for you.
Water kefir is slightly easier to make and is a great option if you are avoiding dairy. It is made with sugar and water or coconut water or even Juice. The water Kefir culture or Tibicos is added and left to ferment for 48 hours. Probiotics are created by the culture feeding on the sugar. This means there is not too much sugar left once fermented so can be a great alternative to high sugar, acidic fizzy drinks. Instead you have a probiotic drink which contains 10-15 strains of beneficial bacteria plus vitamins and minerals and no chemicals. If you still want the bubbles that you would get with soda’s you can second ferment it with a tight lid and you will have a delicious tasting, healthy fizzy drink to enjoy. The disadvantages when compared to Milk kefir is that is still has sugar in so may not be good for people with diabetes or candida issues. It is not as high in minerals such as magnesium and calcium and does not contain as many probiotics as Milk kefir which contains 35-50 strains. Also Water kefir can also contain alcohol especially if juice is used whereas Milk kefir does not make alcohol.
For that reason I think milk kefir has far more health benefits. As stated above it is higher in minerals and probiotics. It can be made with coconut milk which has fantastic antifungal properties. So for this reason it is fantastic for anyone fighting candida or just trying to rebalance their gut flora. It really was the thing that turned my IBS around from which I am now fully recovered. It also helps to fight sugar cravings and rebalance blood sugar levels and blood pressure.
