Why is Raw Unprocessed Lavado Cacao better than Raw Cacao and normal processed Cacao?
Raw and Normal Cacao Powder is subjected to a long fermentation process of cacao beans before it is then roasted. This cooking process eliminates many of the polyphenol antioxidants, which are crucial for its benefical effect.
Lavado, a Spanish word when tranlated into English means “Washed”, is produced by a different method. Firstly, the process of fermentation is very short (typically 1-2 days). Secondly, the roast process is completed in comparatively low temperatures. The majority of medical research is performed utlising Lavado Cacao as the most potent variation.
